Your Guide To Winter Pairings January 2026

As New England settles into freezing temperatures, our culinary and beverage teams are bringing comfort and warmth to the season with hearty winter dishes and refreshed classic cocktails.
Our latest menu celebrates tender, slow-braised short ribs in four flavorful dishes. To start, we are offering Short Rib Bites tossed in maple gochujang and Short Rib Tacos made with our house‑made chile mole. The Winter menu also features an elevated take on our handhelds with a sourdough Short Rib Grilled Cheese with sharp cheddar and jalapeno jam. It’s perfect for lunch, brunch, or a casual dinner. We are also excited to share that we partnered with Lilly’s Fresh Pasta to create our new Short Rib Ravioli. They’re served with a Gruyere cream sauce, roasted butternut squash, bacon, and grapes for an incredible sweet‑and‑savory balance.
For each Winter dish, our head of Beverage, Jeff Boyer, developed a line of spirit-forward whiskey cocktails that are perfect for pairing. Each cocktail highlights a key ingredient from its paired dish, creating a more intentional and complete dining experience.

Spice from the Rye and gentle bitterness from Punt e Mes offset the dish’s creamy, savory layers for a refined, balanced pairing.
